Namo Avant Thai尖東海旁的新派泰國菜

位於尖東麼地道帝國中心向海一側地舖的Namo Avant Thai有好幾個賣點:1. 戶外座位;2. 海景/煙花景;3. 兼備酒吧和泰國菜館。2016年登上米芝蓮車呔人推介之後,其泰國師傅主理的新派泰國菜亦漸漸廣為人知,最近店家剛剛推出了網羅絕大部分招牌菜的八道菜嚐味餐單,自然要去試試。

以裝修而言Namo Avant Thai感覺比較像西餐廳多過泰國菜館,原來開業之初由分屬西班牙和泰國籍的兩位師傅設計菜式,比較傾向fusion菜風格。及後西班牙廚師離職由泰國師傅獨挑大樑,裝修和用料中的fusion感覺還在(例如用上法國春雞、安格斯牛臉頰、西班牙豬肋骨等),但比較傾向泰國傳統菜式的風格。

蒜油大蝦及香酥雞手指配辛辣汁

當晚甫踏進店內即嚐餐前小吃(amuse-bouche) Standing Shrimp,以西瓜、蝦和一小片金不換構成的小點非常開胃,頗收先聲奪人之效。八道菜式包括:

新鮮南澳生蠔配蕃茄辣椒醬
脆皮香煎鵝肝配脆米餅
蒜油大蝦及香酥雞手指配辛辣汁
炭燒地中海大八爪魚配香茅泡沫
挪威三文魚配青檸辣椒泰蒜汁
西班牙豬肋骨配南瓜醬伴清邁咖喱
英國蟹皇炒飯
3重口味糯米飯配鮮芒果和椰子意大利雪糕

其中脆皮香煎鵝肝配脆米餅酥脆而不油膩,配脆米餅同吃正好減輕了煎鵝肝的膩滯;蒜油大蝦和香酥雞手指分別都是一串份量,兩者都處理得恰到好處,火候剛剛好而不會把食材烤過火而變老;炭燒地中海大八爪魚比較像南歐菜,難得泰籍師傅同樣掌握精準,八爪魚沒有煮久變韌,而是保持鮮嫩冶味;慢煮的三文魚配青檸辣椒泰蒜汁十分醒胃美味;蟹皇炒飯用上整隻蟹鉗和大量蟹肉,令我想到曼谷唐人街那家蟹鉗麵。
