【歐歐茶餐廳】懶人豆腐花


前幾期「鱔稿王」曾經提及家中簡易自製豆腐花方法 
好奇下也來實驗一番 
果然不難做 
成品(置頂圖)無論賣相和味道都不錯呢 
原食譜是用微波爐製作的。由於家裡沒有微波爐, 製作及份量稍為改動了些。建議大家先試做小量, 再因應豆漿的濃度和爐具的火力調配出適當的比例及時間。 
材料(二人分量): 
豆漿450ml (自製或現成的都可以) 
鹽滷(nigari) 30ml (約2湯匙)
(原食譜的比例是450ml : 20ml, 可是做起來卻無法凝固) 

圖中的nigari購自citysuper。儲存期約1月, 可分多次使用。
鹽滷據說是由天然海水提煉出來的物質, 北方人和日本人都愛用鹽滷作豆腐的凝固劑。因為成份天然, 所以應該比用石膏粉健康。不少台灣和日本的網頁還稱鹽滷有各種神奇的作用, 總之減肥排毒護膚養生皆宜云云, 信不信由你^^
做法:
把鹽滷和豆漿混合拌勻, 撇走泡沫, 置蒸鍋或鑊以中火蒸15分鐘至豆花凝固, 取出用保鮮紙封口焗3分鐘即成 (下圖為剛完成的樣子)
食用時可加入自己喜歡的糖類調味

    我又看到有些人用乾的鹽滷加入開水溶解後，倒入已煮熱的豆漿，靜置20分，就成豆腐花。希能回覆。謝謝

    put the shell to her ear and screamed. There was a
